Banana Based Pancakes

Recipe: Ingredients (makes 9 total):

  • 2 medium ripe bananas (best with some brown spots)
  • 2 eggs
  • ½ cup unsweetened almond milk
  • 1 ½ cups old fashioned rolled oats
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • Olive oil, for cooking

 

Directions:

  1. Add all ingredients to a blender and blend on high until completely smooth.
  2. After heating up your pan, lightly coat it with olive oil and place over medium heat. Once the pan is hot, add ⅓ cup batter to the griddle for each pancake, and cook 2-4 minutes until the pancakes slightly puff up, and you see bubbles around the edges.
  3. Flip and cook until golden brown on the bottom. Lower the heat if pancakes are browning too quickly. If your griddle starts to smoke, that means your pan is too hot.
  4. Wipe the skillet clean and repeat with more oil and remaining batter.
